This creamy, protein-rich avocado toast with scrambled egg is a quick and healthy breakfast you’ll crave daily. Made with ripe Hass avocado, soft scrambled eggs, and golden toasted bread, this dish delivers flavor, nutrition, and satisfaction in under 10 minutes.
1 slice sourdough or whole grain bread
1 small ripe Hass avocado
1 tablespoon lemon juice
2 large eggs
1 tablespoon heavy cream
2 tablespoons butter, divided
Flaky sea salt and black pepper, to taste
1. Toast the bread until golden and crisp.
2. Mash avocado with lemon juice, flaky sea salt, and black pepper in a small bowl.
3. Crack eggs into a bowl. Add heavy cream and a pinch of fine sea salt. Beat until fully combined.
4. Heat 1 tablespoon butter in a nonstick skillet over low heat.
5. Add eggs and stir constantly with a spatula until soft curds form.
